In which Justin makes a pie

I mentioned on Saturday that Carol shared her apple pie recipe and then managed to procure a bag of the ever-so-coveted Gravenstein apples for us. The harvest was weak this year so they’re harder to find and more expensive than usual, but Carol has her connections! They weren’t pretty, but you don’t need pretty for a pie.

She and Amy both emphasised that Gravensteins don’t keep as long as other apples, so we got right down to pie making! By which I mean that Justin made the pie and I provided moral support.

Within hours we had a real live pie staring us in the face, smelling like heaven among us.

And oh! So, so delicious. The apples are by far the best pie apples I’ve ever had. And the ginger and nutmeg that go into the filling give it an unexpected flair. The crust was good, but we think we might be able to improve. There are plenty more apples, so stay tuned!

    Is this Justin’s first pie? It’s beautiful! British Baking Show, here he comes. 😉 Glad it was delish. Did you try it with a bit of cheddar cheese?
